This week’s dinner menu


Fresh produce is purchased from local produce store. Frozen veggies are purchased at Trader Joes or Safeway. Meats are from Costco. Spices are from Trader Joes or Safeway.


Lemon Pepper and garlic roasted chicken breasts served over plain quinoa  and fresh spinach sautéed with garlic and a drizzle of olive oil. The chicken I will pressure cook in the Instantpot and the quinoa I always make on the stove top plain in large batches for the week.


Whole chicken seasoned with rosemary, garlic and lemon pressure cooked in the Instantpot. I will only use maybe half of the chicken and the rest will go into salads for lunches. Serve the chicken on top of spaghetti noodles tossed in our favorite tomato basil sauce from Trader Joes with zucchini, mushrooms, and fresh spinach tossed in because I have to feed the kid veggies.


White fish ceviche: white fish (we use tilapia), diced tomatoes, onions, jalapeños, diced avocado and cilantro marinated all together in fresh squeezed lemon and lime juice. Served with tortilla chips. I like to add black beans to my ceviche for added protein. This is a great “no cook” dinner option that we enjoy year round.


Pot roast pressure cooked in the Instantpot with diced russet potatoes, and carrots. I peel the potatoes and cut into quarters. The carrots I just wash and put in whole. The pot roast is seasoned with salt, pepper, and garlic powder. I pressure cook the pot roast first, adding 1 cup vegetable broth to the bottom of the pot. Then I add the potatoes and carrots and pressure cook for an additional 5 minutes or so. Super easy and filling. My husband and son love this dinner!


Chili lime and cilantro shrimp tacos. I will take fresh shrimp and marinate them in the Trader Joes Chili Lime seasoning mix then pan cook them with a teaspoon of olive oil. Chop some tomatoes, white onion, cilantro, and jalapeno to make a simple pico de gallo salsa and then serve with corn tortillas. If I have a good avocado I will slice that up too. Black beans on the side for added protein.


Trader Joes Mandarin Orange chicken, frozen veggie stir fry mix, plain quinoa, pork gyoza dumplings. This one is pretty easy since you just follow the instructions on the packages. I like to make “fried rice” with the quinoa by scrambling in an egg and frozen peas and carrots. Season with “fried rice” with just little bit of soy sauce and siracha sauce.



French bread pizza and goddess salad. Take a french bread loaf and cut down the middle, layer pizza sauce or pesto depending on what toppings I want to add. Then I will add the mozzarella cheese and layer the toppings. Place in the oven for about 10 minutes or until edges are slightly toasted and cheese is melted at 350 degrees. Salad will be romaine lettuce, cherry tomatoes, sliced almonds, chives and tossed with Trader Joes Goddess dressing.
